SALA Phuket restaurant
serves a delicious mix of Thai and international cuisine devised by
Italian-born executive chef Davide Pritoni who was previously executive
chef of sala lanna in Chiang Mai.
Chef Davide
focuses on identifying quality local suppliers of fresh produce. His
menus are a mix of brasserie-style international comfort food,
delectable Thai dishes, and succulent local seafood and grills.
Norwegian Salmon Tartar
Freshly
imported Norwegian Salmon, marinated with Italian Evoo and vine ripened
Naples cherry tomatoes, avocado and rocket leaves served on sweet
pepper.

Method
Authentic
Mediterranean Italian style
1.
Cut the salmon into cubes, and flavour it alone with
oil, salt, lemon juice.
2.
Cut the tomatoes and avocado cubes and season with olive
oil, salt, black pepper.
3.
Use a round ring and lay the first layer with cherry
tomatoes and avocado, then lay on top of the Salmon.
4.
Decorate with a sprig of fresh arugula over the whole,
and spread in the dish the pink pepper.
