BLACK TRUFFLE MONTH AT LAFITE,
SHANGRI-LA HOTEL, KUALA LUMPUR
The
black truffle has a starring role in the food at Lafite, the French restaurant
at the Shangri-La Hotel, Kuala Lumpur, from 23 February to 21 March.
It has been declared the Black Truffle Month,
and Lafite will showcase this gourmet treasure from Perigord, France, known as
the black diamond of the kitchen. This highly prized edible mushroom exudes a
unique and enticing aroma that has wowed diners all over the world.
Lafite’s chef de cuisine Jean-Philippe
Guiard has created a special French menu with black truffle, from appetisers to
soup, main course and dessert.
These black truffle dishes appear in
a three-course, four-course or six-course set menu, at RM350++, RM400++ and
RM500++ respectively.
You can begin the six-course menu
with Black Truffle Duck Liver Terrine, Lentil and Truffle Coulis, Warm Brioche.
It continues with Crispy Tiger Prawn with Parsnip Truffle Puree,
followed by Truffle Root Vegetables Creamy Soup, Roasted Lobster and Truffle
Butter Allumette.
Wagyu Beef Tenderloin with Black
Truffle Crust, Truffle Creamy Potato and Rossini Sauce is the main course.
Then
there’s the superb treat of Brie de Meaux with Black Truffle, Roasted Fresh
Pear, Ruccola and Truffle Salad.
Black truffle
is highly appreciated in desserts, and this appears in the Truffle Chocolate
Profiteroles, the exquisite finale to a sublime truffle feast.
The French
black truffle is a species native to southern Europe and France accounts for 45
per cent of the world production of black truffles.
